Nutrients we obtain from our diet can be divided into two broad categories: macro-nutrients (carbohydrates, fats and proteins) which are present in relatively large amounts in our foods, and micro-nutrients (vitamins, minerals and trace elements) that occur in small quantities. In the digestive tract macro-nutrients are broken down to provide the building blocks required for energy production, and to manufacture the vast array of complex molecules unique to humans.

Carbohydrates (sugars and starches) are broken down to glucose which provides energy to cells, fats and oils are broken down to fatty acids which are used for energy storage and the manufacture of certain hormones, while proteins are broken down to amino acids which are used in the manufacture of muscles and body organs, as well as the enzyme systems all cells require in order to function properly. Micro-nutrients are not broken down during digestion but remain intact and function as co-enzymes of the various enzymes present in the cell.

Macro-nutrient building blocks (glucose, fatty acids, amino acids) as well as the micro-nutrients are processed by a network of biochemical pathways that occur in all cells.
